To complete the collection of bottles in flight just now we finish the Lindores tasting with another Casks of bottle. This time we look at STR’d Red Wine maturation. Red wine was an obsession for me which predates my whisky one. I never quite got into the community like I did in spirits. We are just a much nicer and inclusive bunch 😀

Red wine is all very good I suppose and as I sit in here actual France I do worry that someone might see this but… wine has only one purpose and that is to mature whisky.

The barriques themselves have come from Portugal this time and interestingly I didn’t realize this but the bottles are actually filled onsite at the distillery.

Nose: Mellow fruity apricot jam, toffee notes and a hint of cinnamon combined with butter and custard.

Taste: Sweet and spices. Mellow plums and red berries, treacle, cinnamon spice and a pleasant woody
smoky note. Very smooth, silky texture.

Finish; Medium to long with spices, honey and caramel notes

My Notes

Colour – slightly red from a distance more orange up close

Palate – A toasted seeded bread which has been left slightly too long in the grill topped with a slightly posh red fruit compote but the kind of thing Tiptree might make which has been laced with like a bit of Ayrshire bacon

Finish – lingering and spicy finish. I agree on the honey and caramel notes from above as well

Final Thoughts

A great finish to a collection of Lindores bottles. I really have enjoyed exploring the range and really do want to get over and visit. There is a lot of small new distilleries out there. Quite a few have a lot of big money behind them and I don’t know how many will survive even with that money but Lindores have a good product and deserve their spot on the field.
